Firehouse subs will open this week.

I just spoke with Firehouse representatives Junior Chambliss and Mike McCown and they told me the restaurant will be open to the public beginning at 5 p.m. Thursday.

Check out another opportunity to eat a delicious farm-to-table meal with our friends from Homestead Heritage! Don’t worry about getting turkey-ed out before the big day: the menu offers a fresh take on standard Thanksgiving fare.

The star of the evening will be sage and garlic roasted Cornish game hen (raised on the farm) with apple sausage stuffing. Also on the menu are dishes made with Homestead pumpkins, sweet potatoes, apples, and green beans. I can’t wait to try the caramelized pumpkin soup with sage crème fraiche!

The Hippodrome's Grand Opening Week is just eight days away and we're particularly excited about the Gladsome Light show on Nov. 19.

Originally we told you The Digital Age was playing and they're friends of ours, but now another bunch of our friends has taken over the show. Tickets for The Glasome Light are $20 for the floor and $10 for the balcony and can be purchased here. Doors will open that night at 7.

Hey, who wants to go to Chili's on Thursday?

I've been given the heads up by our friend Venée Hummel that Chili's is having a give-back day to support Communities in Schools from 10:45 a.m. to 10:30 p.m. on Thursday, which I have to think is the entirety of their opening hours that day.

Bronc's swings open its gate

The soft opening at Bronc’s was two weeks ago, and business has steadily picked up ever since. I spoke with two of the four owners, Jeff Cook and Andy Lella, who explained that the 1,500 square foot restaurant has been a labor of love built on a long tradition of Lella family restaurants. To create the interior, each piece of cedar was selected from the owner’s ranches, the metal work was hand-crafted by Gatesville artist Randy Patterson, and Cook can tell you about each piece of art on the walls. It’s rustic, y’all, and it was obvious throughout our conversation how deeply Bronc’s owners are invested in their product.

This is not new-fangled food: most of Bronc’s chefs have been with the Lella family for 25 years. The flavor profiles were developed with love and attention to detail. Two main themes emerged as Cook waxed lyrical about Bronc’s menu:

One of the most anticipated new arrivals in downtown is almost upon us as the Hippodrome has announced its Grand Opening Week to be held November 14-19.

Actually, the Hippodrome isn't new, it's classic. But it's new remodeled form after $2.6 million in renovations is as worthy of new-stuff celebration as anything. On Friday, the Hippodrome released its plans for opening week, but we learned some additional specifics today.

[ Editor's note: when we saw that our friend Craig had hit Kim's several times in its first week open, we asked him to guest blog in order to let us know what to expect. As an fan of the old Kim's, we knew he had a good feel for it. ]

The first iteration of Kim’s Diner was, ironically, both kept in business and closed down because it was a dirty old restaurant. The interior was dark with a water-stained drop ceiling. The bathroom smelled like mothballs, and though I never knew the amazing waitresses by name, it would not have shocked me one bit if one of them were a Flo. There was always a vague sense of danger in eating there, like being in a Dennis LeHane mystery, and that’s why generations of Wacoans (including me) loved it.

It’s also why the Health Department shut it down.

A few weeks ago, I attended the soft opening of Kuma, the new sushi bar on Austin Ave. Because it was opening night at a sushi bar, I felt obligated to try the sushi.

I saw the pork belly fried rice on the menu and wanted to order it so bad but, like I said, it was opening night at a sushi bar. But on Monday night, I finally made it in specifically to order said fried rice.

The new Kim's on Waco Drive will hold its grand opening Saturday afternoon, swinging the doors ajar at 4 p.m.

I just spoke with Woody and Darla Page, who have poured a lost of elbow grease and money into renovating Kim's. They were a mix of excitement, nervousness and determination after holding a soft opening on Thursday evening. They seemed hell-bent on getting the kinks straightened out.
