WiseGuys eyes Halloween-ish opening

WiseGuys founder Bill Nychay can't wait to debut his Chicago-style eatery in Waco.

Nychay has seen the WiseGuys brand take off in the Killeen area, attracting a loyal following at the three WiseGuys locations there. He said they come in the first time, sometimes expecting Chicago-style pizza, but return for the Italian beef, sandwiches and hot dogs. Nychay has even seen his hamburgers voted best in Killeen.

In a little more than a week, Waco will get a taste. WiseGuys is planning to open at the end of next week, though Nychay isn't sure if it will be Halloween or the first or second of November.

A heads up, go hungry and expecting something other than pizza. Nychay is figuring out how to eventually put pizza on the menu, but it's not a priorty as the restaurant's calling card lies elsewhere.

On Monday, Nychay was brainstorming about the variety of salads WiseGuys could offer when it opens. But he emphasized that WiseGuys specializes in beef dishes that offer plenty of quantity for the price.

The new Chicago-style restaurant is going in the Westview Village shopping center at Valley Mills and Waco Drive, next door to Pep Boys. It's been a while since the shopping center had a thriving restaurant — Peter Piper Pizza, on its way to a new locale, and the now-defunct Ocean Fish & Steak not withstanding.
