Vitek's expanding empire

When the Daylight Donuts shack on Franklin Avenue closed up shop earlier this year, I wondered what might take over in that spot, particularly since it's in my neighborhood.

So there's been an interesting development for anyone, like me, who drives down Franklin Avenue as part of the daily routine. Vitek's is expanding its local empire with a drive through at the aforementioned location.

I noticed a few weeks ago that the building was painted red, so I suspected something was up. Then I heard through the WacoFork wire this weekend that Vitek's was moving in, and then I noticed a sign for confirmation.

I double checked it with Vitek's owner Julie Keith today. She said the process is taking a bit longer than she hoped because the restaurant is so popular and busy during football season. But in between feeding the Baylor football team, Baylor football tailgaters and the usual lot of barbecue enthusiasts, the new location is taking shape.

The Franklin Avenue Vitek's will likely open sometime in October.

For clarification, the Vitek's shack is in the strip center located just on the downtown side of the Valley Mills-Franklin intersection adjacent to La Fiesta.
