Happy 2016, WacoFork friends.

If the last couple of years are an indication, this should be another calendar full of new arrivals as Waco continues to level up. 

A quick look back at the last year or so. We’ve added Twisted Root, In-N-Out, Saltgrass Steak House, Zoes KitchenPotbelly, Bubba's 33 and Torchy’s among other recognizable next-level chains and a plethora of food trucks, many of which have located at the extremely popular Magnolia Market.

The first thing likely to pop up will be Genghis Grill on New Road.

I noticed the Genghis sign on a Freebirds excursion a month ago (Genghis will be just across the parking lot from Freebirds). Today, when I went to grab a burrito bowl for lunch, I noticed a “Coming Soon” sign, one of those liquor license postings and a couple of sheets that I assumed explained the procedure to prospective employees.

Waco Trib business columnist Mike Copeland indicated back in October that they’re looking to open in the spring. I’d say they’re on schedule if not ahead of that time frame.

Even though I've never dined at Genghis Grill, it could become a player in my routine, especially because of its proximity to my house. However, I wouldn't have put it on a "I hope we get" list.

By the way, here is my current "I hope we get" list: Mi Cocina, Tarka Indian Kitchen, Alamo Drafthouse (Lubbock has one), and a Hopdoddy or Grub burger bar.
