First things first, a Smashburger update.
The burger chain is in the process of building out its space in the Valley Mills shopping center anchored by Aldi. But the build out is an 80-day process and the Smashburger staff can't be trained until the build out is largely finished.
I've been keeping track of this fairly closely with Smashburger regional manager Brad Brown. He's had a full schedule with opening several stores throughout the region. Still, I get the feeling he's especially excited about the Waco edition and as ready for it to open as we are.
Where can I get a burger right now?
Speaking of burgers, I was hanging out at Hawaiian Falls on Sunday afternoon when my friend Tye, who had been on a dietary cleanse of late, expressed his desire to have a great burger.
That led me to make a mental list of great burgers in town with the added challenge of listing places open on Sunday evening. And that led to a discovery when I checked on Uncle Bubba's Bistro and found the telephone line to that establishment had been disconnected. The trail then led me to an internet search, whereupon I learned that the artist formerly known as Uncle Bubba's Bistro is now Daddio's in Lacy Lakeview.
In case I'm leaving anyone behind, Uncle Bubba's Bistro was a diner located in the IGA grocery in Hewitt. Though rarely overcrowded, it was loved for better-than-expected cuisine for a hole-in-the-wall greasy spoon in a grocery.
Now a similar menu, including breakfast and lunch items, can be found just off Crest Drive in the building formerly known as Burgers Galore. One item of interest concerning Uncle Bubba's was that they would from time to time offer a ghost chili burger. That item isn't on the menu at Daddio's and I got the feeling there's an ongoing debate about whether to do it at the new location. Let's just say it's not outside the realm of possibility.

Our burger jones on Sunday evening led us to Fuddruckers, where we got our fixes.
Since I was planning on the whole thing being bloggable, I made sure to hammer it home by ordering the Kobe burger. Fuddruckers now offers Kobe beef for a couple dollars more.
This is the second time I've had Kobe beef this summer and I've come to a conclusion: The difference between other beef and Kobe beef is akin to the difference between a 25-yard touchdown and a 99-yard touchdown (this metaphor brought to you by the impeding start of football season). The 25-yard touchdown and the 99-yard touchdown are both worth 6 points, but the 99-yard play has a definitive "Wow!" factor.
