In case anyone is thinking the new wave of restaurants to hit our town has subsided, well, it hasn't.
Among the next ripple of new will be The Egg and I, a breakfast-brunch-lunch cafe that is set to open October 15 in the shopping center on Franklin Avenue which is anchored by Outback Steakhouse.
Mike and Eva Beheler, who ran Wing Stop in Waco for more than 10 years, will now try to make The Egg and I just as popular. Their new restaurant is taking shape and banners are hanging from the front of the restaurant announcing that they're hiring and opening soon.
Here's a look at their menu.
Mike Beheler told me The Egg and I is a restaurant chain based in Denver. Car dealer Mac Haik is opening a bunch of them in Texas, but gave Beheler the green light to launch one in Waco with the agreement that Beheler will expand to the Temple area. Beheler said there could also eventually be multiple locations in Waco.
So that's part of what's new. Coming in the next few days will be updates on the new bistro on Valley Mills called Vibrante and we'll try to have opening dates for the new Vitek's and Cafe Cappuccino locations as soon as they're available.
