The extra few miles to Bellmead this week were worth it for a tasting of Friday's Etouffee! It was incredible - creamy, thick, spicy, full of flavor - and crawfish! It has the perfect light roux and rich seasonings. Friday and her husband are from Lafayette and this recipe they brought with them is a classic. The crawfish were cornmeal battered - not my favorite, but they poured out of the poboy, which was served fully dressed on the most authentic poboy bread you can find in central texas. The shrimp and oyster poboy was even better!
