Meat was pretty good
I had the brisket and ribs. The brisket was tender with a nice ring and bark and a hint of smoke. The ribs were tender and came off the bone easily. The sides were forgettable. Used just enough sauce to moisten the bread for a sandwich and it had a nice flavor.
I just wish somebody in Waco would follow the lead of the great bbq joints in Central Texas and use a salt and black pepper rub. That would take meat from pretty good to great.
