Local chef Davie Gorham has been an active participant with us since we began WacoFork more than four years ago, so when he told me he was going to roll out his own truck, Honky Tonk Kid BBQ, I was excited to see what he would do.
Gorham is knowledgeable about all kinds of food, but he's especially a connoisseur of barbecue. He's bringing that insight to the truck as he'll be offering barbecue fusion. On Thursday night, he presented a couple of menu items at The Dancing Bear and he was kind enough to invite me.
The Honky Tonk Kid trailer is still yet to debut as Gorham kept things simple on Thursday. He served wrapped sandwiches and salads, but it was a successful preview. As I was speaking with him about his plans, we had to continually pause the conversation to allow him to serve and ring up new customers.
The crowd at The Dancing Bear, including owner Paxton Dove and Club Sandwich's Youngdae Moon, were raving about the sandwiches before I even got my hands on one. Moon told me he was on his second sandwich. Here's why:
The Hog of a Time is a smoked orange and chipotle pork belly sandwich with arugala, crushed pineapple, Monterey jack cheese, chipotle aioli on a Kings Hawaiian bun.
The pork belly, which Gorham said he marinated in an orange juice-chipotle pepper concoction, was tender and delicious. I could see why Moon went for two as I could hardly put mine down.
Gorham told me he'll be continuing the soft-opening practice during August and debut his trailer in September. He'll frequent The Dancing Bear and locations on Franklin Avenue during the lunch hour. We'll give updates on where you can find Honky Tonk Kid BBQ and other food trucks as often as we can, especially when the weather cools off a bit.
