After church on Sunday, I overheard someone ask someone else where they wanted to have lunch. The suggestion was made that Potbelly was open, which I doubted.
Later on Sunday, I was leaving the H-E-B across Valley Mills from the new Gander Mtn shopping center when my friend said it was open because he saw people there and the lights on. So I figured I just missed the opening.
Nope. I didn't miss it. It opens tomorrow. The Potbelly folks told me it will open up at 11 on Tuesday.
While I was by there, I peered inside the Starbucks next door. It's still being finished out. I've been bugging my barista friends about it and it could be a couple of weeks away.
I've had a lot of questions about what's going in next door to Potbelly and Starbucks. I've been guessing that's where Zoe's Kitchen is going, but that's unconfirmed. We've heard that Zoe's is going in the Gander Mtn shopping center, but we're still working to find out the exact location and when it will be here.
One more bite: Mike Copeland of the Waco Tribune-Herald reported in his Sunday column that Twisted Root has acquired a building permit to remodel the Texas Playhouse at I-35 and University Parks.
