There's more exciting news about development taking place on Austin Avenue.
I just spoke with Muddle co-owner Jerry Dyer while he showed me construction taking place inside the old Treff's location on Austin, next door to Bank of America. Dyer and his group, which includes Muddle co-owner Seth Sutton, will be opening Kuma, a sushi bar that will also include an upstairs dance club.
The project is progressing well, Dyer said, and the evidence inside to-be Kuma backs him up. The sushi bar and the beverage bar are in place and it doesn't take too much imagination to see a pretty happening joint coming together.
When? Dyer said they're targeting the end of July. His specific statement was that they're hoping to be set up and have some time for the staff to gain experience in time for the Baylor-SMU football game on the weekend of August 31.
In order to get the sushi part right, Kuma is working with the former executive chef from Austin sushi bar Kenichi.
As mentioned earlier in this article, they're also planning an upstairs dance club. Dyer said it's not necessarily his jam, but it's a hole in the Waco nightlife scene. I'd say that's accurate.
One more bite: Kuma means "bear" in Japanese.
