I was picking up a little lazy-Thursday-on-Spring-Break lunch at Bangkok Royal today when, while walking back to my car, I noticed a new food truck across University Parks.
It was Xristo's Cafe and it's been open for a little more than a week, which I learned by crossing the street and speaking with owners Xristo and Stephanie Garman.
Xristo's first made an impression around here when they served their Greek food at the Winter Wonderland near the convention center in December. I didn't make it to Winter Wonderland, but word on the street was that the Greek food truck was fantastic.
Now Xristo's is up and running right downtown and right on the river. It's an encouraging sign to see the variety of trucks expanding. From Xristo's location, you can see both the Suspension Bridge and McLane Family Stadium in the distance. It doesn't take too much forward thinking to realize a fantastic Saturday this fall could involve a coffee downtown, a stop by the food truck for lunch and then a short walk to see some top-notch football.
