Folks can say what they want about Waco. I'm not sure what all that is these days, but I tell you what you can't say about Waco now or pretty much anytime I've lived here (and that includes a lot of years).
You can't say nothing ever happens here.
I know this because every time I go out of town for a week, I come back to find that things happened while I was gone. I traveled to Chicago and Wisconsin last week, which is why there were only two updates on the blog. I planned for more, but part of my plan included getting emails later in the week which I would turn around into a blog. That didn't happen on Thursday or Friday, but it did happen over the weekend once I was already back from vacationing.
A few things moved forward, including an opening, a big construction step and, well, stuff that was probably already making progress but now has my full attention. Things like:
- Outlaw BBQ opened on La Salle. I'll have an introductory blog about this new joint later in the week.
- The Lone Mammoth cleared their lot on Speight. The picture accompanying this blog, I presume, is the bulldozer that did the work.
And
- New stores — both the convenience and grocery-super variety — appear almost ready to open for business. The HEB at Valley Mills and I-35 is massive and apparently pretty close to ready. Meanwhile, the new Stripes convenience stores have that same look, and this is especially intriguing as they include Laredo Taco Company.
One more bite: Clay Pot is revamping their wine list and selling wines at 50 percent off regular price. More info on this later in the week.
