I stopped by the soon-to-be-open Outlaw's BBQ and spoke with owner Kirk Taylor this morning. Taylor is preparing to open a pit-barbecue restaurant at 8th Street and La Salle. He said he was hoping to open by July 5, but it's looking like middle of July now.
Taylor will be offering pecan-smoked brisket, ribs and sausage — basically going for Texas barbecue as well as it can be done.
Since he mentioned that everything would be smoked, I had to ask him if he was a fan of Texas Monthly's assessment of Texas barbecue (i.e., that is pretty much has to be smoked). He said he definitely pays attention to it. It's not the easiest thing in the world to launch a Texas barbecue joint with the expectation of landing a spot on the Texas Monthly Top 50. Maybe that's setting the bar too high, but I can't help it. Waco needs a place on that list and even though I believe Vitek's and Tony Demaria's deserve to be on it, it also doesn't hurt to have another competitor in the running.
One more bite: I have to credit the WacoFork wire for this one. My buddy Zach Daniel asked me what I knew about it when he and I were at True Love to see another friend, Paul Mitchell, play music on Friday. I didn't know anything about it, but now we all have the scoop. Thanks, Zach.
