Mama Fu's plans to open at the start of July

This just in: Mama Fu's has July 1 tentatively targeted for the grand opening of its new Valley Mills Drive restaurant. That will make it the first restaurant to open in the shopping center anchored by Aldi and soon to also include SmashBurger, Jimmy John's and Rusty Taco.

One cool thing about Mama Fu's, which is sort of Asian-fusion casual dining, is that it's an order-at-the-counter deal during the day and table service at night. Click here to check out their menu.

I met assistant manager Crystal Frary on Friday and she told me everything is on schedule to open July 1. Of course, with construction and all that goes along with opening a restaurant, that date could still possibly shift a little. We'll let you know.

Frary enthusiastically described some of Mama Fu's special features, including catering and delivery. Mama Fu's will have a 12-mile radius for delivery, which means that it reaches the Baylor campus.

When I stopped into the Georgetown Mama Fu's back in the fall, I discovered they were offering half-priced appetizers from 4-7 p.m. I'll have to check if that will be the same at the Waco location, but I'm betting they have some kind of good deal for happy hour.

(The appetizer in the photo is Thai Dynamite Shrimp served over Asian slaw in a martini glass.)

One more bite: Mama Fu's is currently hiring. Frary was eagerly awaiting potential new employees when I met her. If you're interested in working there, just drop by.
