Over the weekend, I saw a picture of one of the Dichotomy crew taking a sledgehammer to a wall, which I took as a sure sign that the progress of our new coffee bar has shifted gears in its progress toward becoming a reality.
Sure enough, co-proprietor Brett Jameson confirmed that construction has begun on the inside and outside of the building. They're hoping to be open by September. Just a heads up, in case you didn't already know, you can currently find Dichotomy's coffee offerings at their location inside the Croft Art Gallery or at the Waco Downtown Farmers Market.
I've written this before, but it's worth repeating, Jameson is more into coffee than I am into anything (including Texas Tech football and Texas Rangers baseball). That vested interest is reflected in the coffee. If you have functioning taste buds, you can taste the difference.
But, just to be different, when I asked Jameson for confirmation and a photo of the new digs, I also asked him to give me three things he's excited about other than coffee.
The first thing he mentioned, and this was no surprise, was the rooftop deck Dichotomy is installing at its new location at Austin Ave and 5th Street. That's one thing that will set Dichotomy apart.
Another is the combination of third-wave coffee and craft cocktails. I don't mean in the same glass. I mean if you and a friend are headed out and one of you wants a latte and the other wants a sidecar, then bingo. Dichotomy. This is where co-founder Alina Mikos comes in, as she has been researching and strategizing all angles of cocktails and cocktail service.
The third thing Jameson mentioned was that Dichotomy will have space available for seminars, classes, meetings, basically anything in which a group of people gather for a specific purpose.
Now a couple of things I've observed just from being at least close to the inner circle of this deal. Dichotomy will be pretty swanky and unlike anything we already have. It's definitely worth looking forward to its opening.
