Remember Dr. Teeth and the Electric Mayhem? They were the band on The Muppets. Remember their bus?
Well that's the vehicle that popped to mind when I caught up with the La Lola Loca food truck on the Baylor campus today. I believe the picture with this blog explains why I thought of The Muppets band. But I should probably offer a little more info on the new Baylor food truck.
A few months ago — the end of October, apparently — Baylor quietly rolled this thing out. Like everything food-related on the Baylor campus, it's operating under the Aramark umbrella. La Lola Loca is actually a chain of food trucks run by a company called Mobi Munch, which Aramark has contracted to begin meeting the food-truck cravings on campus.
At Baylor, the truck is serving tacos and such at various locations. I found them behind the Bill Daniel Student Center a little before luncthtime on Monday. They move around campus a bit, but this is a common spot.
Another one is near the library on Wednesday nights, when they're staying open until 11 p.m. Their hours are expanding as they're planning to be open later on Tuesday and Wednesday nights soon. Staying open later near the library is part of the attempt for the truck to mirror traffic patterns and activity on campus.

So this is Baylor's initial experiment with food trucks on campus. But don't expect it to be the last. For one thing, word is that food trucks do better when there are several in one spot. I couldn't get official confirmation of this, but I've heard significant rumors that Baylor is planning a central location for food trucks.
This is something that's going to grow. We'll be on it and let you know what we hear.
