Mmmm … migas.
There are quite a few places in town to get a fantastic breakfast, including a plethora of spots to get a good Mexican food breakfast (Jefe, what is a plethora?). One of the newest places is Sergio's.
Of course, Sergio's is not all that new. The restaurant has evolved from Siete Mares to El Potosino to Sergio's, which opened in the spring. But a couple of weeks ago, Sergio's began serving breakfast, which they do now from 6-11 a.m. Monday through Friday, 8 a.m. to 2 p.m. on Saturday and 10 a.m. to 2 p.m. on Sunday.
And check this out: Sergio's is opening from 1-4 a.m. on Friday and Saturday nights (or Saturday and Sunday morning depending on how you look at it). That means all you late-night socialites can get your breakfast on as you wind down from a night of merrymaking.
I spoke with Jim the cook this morning and he told me a great story. He said he set up Sergio's breakfast dining room — which is its own separate space — to resemble the diner where his father use to eat before work every morning. He said his family lived about 50 minutes from his father's work, but his dad often left extra early because traffic could make it a much longer commute. So his dad stopped in the same diner every morning, where the cook set up facing the street. That way the cook saw his dad long before he sat down at the counter and would have his usual breakfast order ready almost as soon as Jim's dad sat down.
If that's not Don Draper-level nostalgic greatness, I don't know what is.
Segio's has also doubled its lunch menu and made some adjustments to its dinner menu. It has taken some time for owner Sergio Garcia to get his new spot where he wants it. When he first opened on Austin Ave. he had a cardboard sign. But Sergio's is taking shape nicely by setting up unique facets to meet many dining desires.
Between the popular Sergio's truck at the Waco Downtown Farmers Market, Sergio's established unique Mexican seafood cuisine and the new breakfast diner, Sergio's is a pretty good choice at a lot of different times.
