Waco's next new Italian restaurant — Wise Guys Chicago Eatery — is a couple of weeks away from opening its doors in the Westview Village Shopping Center on Valley Mills Drive.
I spoke with co-owner Bill Nychay, who gave me a tour and overview of the new restaurant this morning. The interior is already outfitted with distinctive Chicago decorations and photos (mob guys and Chicago Bears, stuff like that).
A little bit ago, we mentioned this restaurant was on the way. At the time, I might have hinted it was a pizza joint and I might have been called out by one of our astute commenters that pizza isn't on the menu. Indeed the online menu doesn't include pizza. I stand corrected.
Nychay said the restaurant specializes in Italian beef, sausage and Chicago-style hot dogs. And the restaurants in Killeen, where Nychay began Wise Guys three years ago, has become well known for its burgers.
However, he said the plan is to serve pizza as well. It's not Wise Guys' out front selling point, but pizza is still in the plan.
The front of the restaurant looks ready to go as everything down to the hours posted on the front door indicate that Wise Guys is on the brink of opening. But Nychay said there's still some construction to be completed as they're installing a party room in the back of the restaurant.
Look for it to open by the end of October and rest assured that we will provide an exact date when it's available.
