I received word Tuesday afternoon from my friends Brett Jameson and Alina Mikos that their project Dichotomy Coffee and Spirits is ready to take the next step as they have found their location.
Dichotomy, which has been serving coffee at the Waco Downtown Farmers Market to rave reviews, now has space at 508 Austin Avenue. That's in the middle of the block between 5th Street Icehouse and Bank of America.
Dichotomy will bring something new to our coffee scene as it will feature third-wave coffee as well as a full bar. Mikos moved to Waco from Los Angeles earlier this year in order to run the spirits side of Dichotomy.
"We want to offer craft liqours and specialty drinks with a celebratory nod towards the speakeasy era," Mikos said. "I think we will add unique charm, personality and a splash of class through our overall vibe and drink menu. We hope it's going to be something one wouldn't otherwise find in Waco."
Dichotomy will be renovating the space on Austin Avenue so don't expect to see them open in the next little bit. Jameson said they're looking at the potential for a rooftop deck, so construction on that and the rest of the improvements might be completed by the end of the year.
In the meantime, Dichotomy could be branching out from the farmers market to serving at Croft Art Gallery on Austin Avenue. We will keep you posted on that.
