So it's a new week. As much as I think each week should be appreciated on its own merit, I can't help but think, here in the dog days of summer, that each week just gets us one week closer to exciting things.
The start of football season, for example. Cooler weather for another.
But especially at this moment, we are one week closer to the opening of Freebirds. I posted a quick-hit blog on Friday when I received the information from Freebirds district manager Jamie Williams that they have targeted September 17 as opening day.
I followed up with Williams on Monday and he reaffirmed that date, but also said it could move either way.
"I would love to see it jump up a couple of weeks," Williams said.
In the world of construction and hiring and everything that goes into opening a new restaurant, it's hard to pinpoint an exact ETA.
Williams said he will soon be establishing a center for operations, probably a local hotel, where he will oversee the fine-tuning of the Waco Freebirds as well as conduct interviews. Applications to work at the Waco Freebirds aren't available yet, but we will let you know, so follow the story here.
One thing folks notice on their first trip to Freebirds is that many of the line servers appear to have come to work directly from the club after a Pixies show. This is not a criticism. I consider these people "my people." Freebirds doesn't actively try to hire the body-art intensive, it just kind of happens that way.
"We don't go out and try to find tattooed people," Williams said. "We want people with the right attitude. People who want to serve the customer."
So if you love the punk lifestyle and also burritos, then keep your ears open and we will let you know when you can apply to work at Freebirds. If you don't have a tattoo sleeve covering your right arm, they will still hire you. But — we're just saying — there's still time to get one.
