A new sushi restaurant is under construction in Central Texas Marketplace and could open by the end of February.
The restaurant will be called Waco Roll and is located in the storefront formerly occupied by Camille's Sidewalk Cafe.
I became aware of the new restaurant late last year when WacoFork user and KCEN weather man Nick Piesco inquired about it. I dropped by then and found little to go on other than the darkened neon sushi sign in the window. On Tuesday, I saw an open door when I drove through the shopping center, so I wandered inside.
I spoke with the proprietor, who identified himself as Park. He said he has tentative plans to open next month. I took a quick self-guided tour and would estimate that it will be at least late February before the sushi joint is ready to go, though the kitchen appears to be mostly ready.
Park added that he'll be offering Korean dishes along with sushi.
