In sports, it's called taking what the defense gives you.
In evolution, it's adapting to survive.
In business, it's just good business. In the six months or so that I've known Joseph and Alexandra Parrilla, I've been impressed by their willingness to try new things to get new customers through the Cafe Viejo San Juan doors.
The Cafe Viejo San Juan folks threw a Saturday-afternoon festival during which they roasted a whole pig, they hosted a well-promoted Halloween party, they added breakfast burritos to their menu and featured Baylor football and boxing watching parties in their dining room.
And now, Cafe Viejo San Juan has expanded its menu to include Mexican food.
Though the Parrillas specialize in Puerto Rican food, they have increased their kitchen staff to accommodate the Mexican food items on their new menu.
Joseph has been cooking hefty breakfast burritos for several months now, but he hired a new cook to handle a broader Mexican selection.
The new Cafe Viejo San Juan menu includes fajitas of the beef, chicken, pork and shrimp varieties, enchiladas and chili relleno among other Mexican staples.
Of course, CVSJ will still serve its full array of Puerto Rican dishes.
So the next time your lunch buddy wants Mexican food, but you're craving a little more variety, Cafe Viejo San Juan is the ticket.
