As a journalist, I'm supposed to be able to take a set of facts and put them in order of importance, which is called "inverted pyramid."
However, I have a set of news items related to West Rock Center in Hewitt and I don't want to be the judge of their levels of importance. Oh sure, I have an opinion, but I don't want that to get in the way right now. So I'm just going to spill these things out there and let you decide what's most important.
♦ George's in Hewitt has a new recipe for their hamburgers. More on this is later in the blog.
♦ 3 Spoons is going to open a new location in Hewitt and my sources tell me it will be in West Rock Center.
♦ La Fiesta in West Rock Center is about to change to Cantina Texas. It will still be owned by the Castillo family, but the menu and I'm guessing the ambiance will change.
♦ George's in Hewitt is going to begin construction next week on an enclosed patio that will feature a fireplace as the anchor of the space and even more big screen televisions for sports watching. There's a picture of it on the door if you would like more details.
So there it is.
And now I will enlighten you, dear reader, as to the item that has most vividly captured my attention.
As I was making the rounds on Wednesday afternoon passing out our new WacoFork restaurant window stickers, I chatted with Kyle Citrano at George's in Hewitt.
"You came on the right day," he said.
Citrano unveiled a new burger recipe at the Hewitt George's on Wednesday. He invited me to try it. Like I would ever pass up a cheeseburger.
Citrano said he was in Memphis, dining at some Tennesseean burger joint when he had a revelation. So when he returned home, he began experimenting with a new way to cook burgers.
George's is still using the same big portion of ground beef, but they're splitting the patty in two before they grill it. The result is that two patties better contain the juices from the meat. Then they put cheese on top of each patty, slap them together and put them on a bun, which is toasted in the grease. The sum is beefy, juicy greatness.
I took a discerning (read: grouchy and particular) dinner companion with me to try the the burger and he proclaimed it to be the best burger he had ever eaten. It's possible that a great cheeseburger might flip the switch, converting my friend from grouchy-and-particular to prone-to-hyperbole. At any rate, it was a good burger.
Citrano said the original George's might soon be using the new recipe as well, but as of Wednesday it was a George's in Hewitt joint.
While he was at it, Citrano brought out one of George's new hot dogs, served on a toasted bun with chili, queso, mustard and red onions. It's possible that Citrano is trying to kill me. Or make me fatter.
More on La Fiesta's makeover
Apparently, La Fiesta in Hewitt will become Cantina Texas on November 3, which is a week from today.
The change will not affect La Fiesta on Franklin. The Waco tradition of La Fiesta will carry on at that location.
From what I can ascertain on Cantina Texas' Facebook page, it will be sort of a cross between La Fiesta and Sam's On The Square.
